For the dressing:
1/4 cup yogurt
1 tablespoon Dijon mustard
1 garlic clove, minced
1/2 teaspoon salt
Fresh ground pepperFor the filling:
1 pound of fresh asparagus
1/2 pound of mixed greens ( what ever is in season )1 pound of Dungenes crab meat
Blend all of the dressing ingredients in to a bowl and whisk together.
Wash all of the greens and asparagus and drain.
Cut the asparagus into 2-inch pieces on the diagonal.
Now toss all of the greens with the asparagus and add the crab meat, into a salad bowl.
Mix one cup of the dressing in to salad mixture.
Add more as needed.
